What is the best thing you couldn't do without in your kitchen?

I have a pair of Crate & Barrel tongs that I bought long ago. They still work and I use them almost every time I cook something.

My favorite tool is my mini food processor, no, wait, my stand mixer ;-}

Greeting to all and a blessed NEW YEAR!

"These are a few of my favorite things"  (Ya'll know the song, yes?)
Immersion blender ~ Great for making a smooth sauce or gravy.
Manual egg beater ~ I use it frequently to make my special omelets.(I'm on #4!)
Manual apple peeler/corer ~ My favorite toy!  I make scalloped apples for my hubby often. 
Salad Spinner ~ Rinse and dry your greens, bag and tag 'em, they’ll live longer and you can whip up great a salad in no time.
Sturdy wooden spoons and whisks ~ you can’t have too many of them!
Timers ~ One of my sisters uses her smoke alarm as a timer, (‘nuff said!)  And, the other one says the only reason she has a kitchen is because it came with the house!
Measuring cups and spoons  ~ separate ones for wet and dry ingredients.
Knife sharpener ~ My Grampa told me the most dangerous thing in the kitchen is a dull knife.
Cast iron skillet ~ I inherited this precious jewel when my Poppa passed and I had to threaten bodily harm to anyone trying to take it from me.
Baking pans ~ One word of advice, buy the best you can, sturdy and light colored, you will never regret it. I still use and treat my 30+ Y.O. cookware well.

And now, here is my most special advice to all:  If your cookware has solid colored metal lids, shop around for clear glass lids to fit. Measure the diameter of your sauce pans and skillets, write them down and tuck the note in your pocket. 
Yard sales, “flea markets”, discount stores, etc. are great and inexpensive sources.  And now, you ask why?  You can watch the cooking process without lifting the lid (unless you need to add ingredients), allowing steam and heat to escape, extending the cook time and may tempt you to raise the heat, not a good idea!
