Roasted Peach with Vanilla Sugar

Peaches are wonderful when roasted. This peach recipe underscores the wonderful flavors that can come from a peach that is roasted. Add sugar, yogurt and the exotic flavor of vanilla bean to create an outstanding alternative to chips and other junk food. Live healthy by eating healthy!

 

For the vanilla sugar:

 

 

1/4 vanilla bean

 

2 tablespoons superfine sugar

 

1 small ripe peach, halved and pitted

 

2 tablespoons low fat plain yogurt

 

 

1. Preheat the oven to 400*F.

 

2. Scrape out the sticky seeds from the vanilla bean and blend with the sugar in an electric hand blender.

 

3. Place the peach, flesh-side up, in an ovenproof dish and sprinkle over the vanilla sugar.

 

4. Bake for 15-20 minutes, or until tender, and serve with plain yogurt.

 

Makes 1 serving.
