Super Bowl-You-Over Chicken Chili (New Orleans Saints Tailgating Recipes)

This chili recipe spotlights the New Orleans Saints football team. The New Orleans Saints are a professional American football team based in New Orleans, Louisiana. The Saints play in the South Division of the National Football Conference (NFC) in the National Football League (NFL). The Saints were founded in 1967 as an expansion team and played their home games at Tulane Stadium through the 1974 season. Party at the Superdome with a recipe that is sure to feed all!

1 chicken

1 tablespoon oil

1 medium onion, chopped

3 garlic cloves, minced

3 cans white beans (navy or Great Northern)

5 tomatillos, husked, stemmed, minced

1 16-ounce package frozen white corn

1 tablespoon cumin

2 tablespoons chili powder

1 tablespoon cayenne

1 teaspoon oregano

2 4-ounce cans green chiles

2 cups chicken broth

2 tablespoons lime juice

2 tablespoons chopped cilantro

1. Boil the chicken in enough water to cover for 1 hour. Save broth. Skin and debone chicken; cut into chunks.

2. Heat oil in a large pot and sauté onion and garlic until golden.

3. Add beans and heat.

4. Add chicken and all remaining ingredients except lime juice and cilantro. Simmer, uncovered, for one hour.

5. Just before serving, stir in lime juice and cilantro.

Makes one big batch.
