Jennifer Simpson of Lake City, Florida submitted this recipe in Swamp Guacamole remembrance of her great days at the University of Florida. This recipe highlights the avocado. It is subtle and powerful all at the same time. Easy to make and lasts a long time.  Go Gators! 

Swamp Guacamole

Serves 12

3 ripe Hass avocados, halved, pitted, and peeled

1/ ripe tomato, coarsely diced

1/4 cup minced red onion

juice of 2 limes

2 garlic cloves, peeled and crushed into a paste

2 tablespoons minced fresh cilantro

1 teaspoon ground cumin

salt and freshly ground pepper, to taste

1 large bag tortilla chips

1. In a medium bowl, mash the avocado with a fork until a chunky paste forms. Stir in the tomato, red onion, lime juice, garlic, cilantro, cumin, salt, and pepper until well mixed.

2. If not serving at once, place a sheet of plastic wrap directly on the surface of the guacamole and refrigerate up to three hours.
