Kale is very versatile and nutritious green leafy vegetable. It is widely recognized as an incredibly nutritious vegetable since ancient Greek and Roman times for its low fat, no cholesterol but health benefiting anti-oxidant properties. The key to this salad is finely chopping the kale leaves. This kale salad boasts only 130 calories! Enjoy.
2 tablespoons olive oil
2 tablespoons lemon juice
1 to 2 teaspoons chili powder
1/2 teaspoon salt
2 bunches kale, stems and tough ribs removed, leaves very finely chopped
1. In a large bowl, whisk together oil, lemon juice, chili powder and salt.
2. Add kale, toss to combine and serve.
